Sweetheart Salad This salad is both sweet and hearty. 1 TB. butter (Brynne uses unsalted) 1 Cup chopped walnuts 1 tsp. PENZEYS PEPPER 1 TB. olive oil 2-3 sweet potatoes, peeled and cut into 1-inch cubes 1 tsp. KOSHER-STYLE FLAKE SALT 1-2 6-oz. bags baby spinach leaves 1 medium red onion, very thinly sliced 1 Cup shredded sharp cheddar cheese 1-2 Granny Smith apples, unpeeled and thinly sliced 1 Cup dried cherries 2-3 TB. pure maple syrup or maple sugar 1/4 Cup balsamic vinegar 1-2 tsp. Dijon-style mustard (we used whole-seed country-style) 3/4 Cup olive oil 1/2-1 tsp. salt, to taste 1/4-1/2 tsp. PENZEYS PEPPER, to taste
