Sarina’s Tilapia Salad This recipe is from Penny’s student Sarina. She likes to top her salad with french fries (because, why not?). 1 lb. tilapia filets, cooked and cut into bite-sized pieces 1 bag or bunch spinach 4 hard-boiled eggs, sliced 1 pint cherry tomatoes, halved 1-2 cucumbers, sliced 1-2 Cups croutons 1-2 TB. SALAD ELEGANT 2 potatoes to make homemade french fries, if you are so inclined 1 TB. BUTTERMILK RANCH DRESSING MIX 1 TB. water 1/2 Cup buttermilk or regular milk 1/2 Cup mayonnaise (we used light)
