Fajita Baked Potatoes This recipe from Barbara Holmes is a wonderful meatless meal the whole family will enjoy. 4 large baking potatoes 1 medium onion, diced 1 bell pepper, seeded and diced (we used red) 4 oz. crimini mushrooms, chopped (regular mushrooms would work if you can’t find crimini) 2 TB. olive oil 1-2 tsp. FAJITA SEASONING 1 Cup shredded cheese (we used Mexican Blend) 1/2 Cup sour cream 2 TB. fresh chopped cilantro 2 TB. sliced radishes
