Curried Chicken I'm sharing my mom’s recipe for curried chicken. A bit of background... my mom immigrated to the US in 1964 from St. Lucia. She had met my dad, a Minnesota farm boy, while he was a Peace Corps volunteer. She often told me how, her first years here, she hesitated to make Caribbean recipes and instead learned how to make “American” fare. Fortunately, she did eventually introduce many recipes to the delight of our extended family. Best, Simone V. 1 big chicken, cut up 3 TB. oil 2 large onions, chopped 3 cloves garlic, crushed 3 TB. PENZEYS CURRY 1 TB. GROUND CORIANDER 1 TB. POWDERED GINGER 1 TB. GROUND CUMIN 1 tsp. CAYENNE PEPPER 1 tsp. PENZEYS PEPPER 2 tsp. TURMERIC 3 CARDAMOM SEEDS, crushed (optional) 6 WHOLE CLOVES 1 CINNAMON STICK 1 WHOLE BAY LEAF 3 large tomatoes, chopped juice of 1 lemon
