Cheesecake "Kowutz" This is a tart and creamy Polish cheesecake. 1 packet dry yeast or 1/3 fresh yeast cake (The recipe calls for the old-fashioned fresh yeast cake, which we had never tried, and it's awesome! But it doesn't last too long once opened, so we listed the dry amount as well.) 1/2 tsp. sugar 2 TB. warm water 1/3 Cup butter 1/4 Cup sugar 3/4 Cups cake flour 1 Cup all-purpose flour 1/4 tsp. salt 1 egg plus 1 egg yolk 1/2 Cups whole milk (lukewarm), divided 1 large (24-oz.) carton small-curd cottage cheese 3 egg yolks 1/2 Cup sugar 1/4 tsp. salt 1/4 Cup sour cream 1 TB. lemon juice 1/2 tsp. MINCED LEMON PEEL 2 TB. all-purpose flour 1 1/2 tsp. PURE VANILLA EXTRACT 1/2 Cup golden raisins (soak in 1/2 Cup boiling water for 10 minutes and then drain well) 1/2 tsp. CHARNUSHKA
