Arizona Dreaming Salmon with Greens Very quick, very healthy, and very tasty. 2 6 oz. salmon filets 2 tsp. olive oil 1 tsp. ARIZONA DREAMING (about 1 lb. mixed greens); we used: 1 bunch rainbow chard 3 stalks kale 2 Cups spinach 1/4 Cup chopped onion or 2 TB. AIR-DRIED SHALLOTS soaked in 2 TB. water 1 jalapeno or serrano (if you like hot) OR 1 poblano pepper (rich but not hot), seeded and chopped 2 tsp. lemon juice or red wine vinegar 1-2 tsp. ARIZONA DREAMING 1/2 tsp. salt, if desired
